We only use local agricultural products certified by Park Curone such as cheese and goat curd.
You will be swept away by our starters of cold meats and cheeses of the Montevecchia area such as the famous caprini, whose processing technique has not changed over the years. It is fresh raw milk cheese produced exclusively with goat milk.
Our cheeses are among the main ingredients of some first course dishes: dumplings with mature cheese, cheese dumplings and pears, risotto with aged cheese, hard cheese ravioli, gnocchi in gorgonzola cream with spinach and tomatoes.
